Just Harvested: September & October 2025

Olives for these oils were harvested in September and October, at peak ripeness, then immediately milled and carefully stored to preserve flavour, aroma, and nutrition. This timing matters. Olive oil is a fresh juice, and like all fresh foods, new harvest oil is at its absolute best right after pressing.

What Does “Ultra-Premium” Really Mean?

Not all olive oils are created equal. Every olive oil we carry meets — and often exceeds — the Ultra-Premium standard, the highest quality classification in the world.

Ultra-premium olive oil must:

  • Be fresh (current harvest)

  • Have exceptionally low acidity

  • Pass rigorous chemical and sensory testing
